Ingredients

For the Chicken

  • 3 lbs chicken (whole chicken cut into serving pieces, or your preferred combination of thighs, drumsticks, wings, or breasts)

  • 1 lime

  • ½ cup white vinegar

Seasoning Blend

Use all of this seasoning blend to season the chicken.

For Cooking

  • 2 tablespoons vegetable oil

  • 2 tablespoons Betapac Curry Powder (for toasting)

  • 4 cloves garlic, smashed

  • 1 large onion, chopped

  • 1 bell pepper, chopped

  • 2–4 green onions, chopped

  • 1–2 tablespoons fresh ginger, minced

  • 1 whole Scotch bonnet pepper

  • 1 large carrot, chopped

  • 2–3 potatoes, peeled and diced

  • 1–2 cups hot water (depending on how much natural juices the chicken releases)

Instructions

1. Prepare the Chicken

Trim away any excess fat and remove the skin if desired.

Wash the chicken with the lime and white vinegar. Rinse thoroughly under cold running water and pat completely dry with paper towels.

2. Prepare the Seasoning Blend

In a small mixing bowl, combine:

Mix well until fully combined.

Rub the seasoning mixture evenly over every piece of chicken, making sure each piece is well coated.

Cover and marinate for at least 30 minutes, or overnight for the best flavor.

3. Toast the Curry

Heat 2 tablespoons of vegetable oil in a large pot over medium heat.

Add:

Stir continuously for 2–3 minutes until the curry becomes fragrant and slightly darker in color. This step, often called "toasting" or "burning" the curry, removes the raw taste and develops the authentic Jamaican curry flavor.

4. Cook the Chicken

Add the seasoned chicken to the toasted curry.

Stir well until every piece is evenly coated with the curry.

Cover the pot and allow the chicken to cook for 10–15 minutes, stirring occasionally. During this time, the chicken will naturally release its own flavorful juices.

5. Build the Curry

Once the chicken has released its natural juices, add 1–2 cups of hot water, depending on how much liquid is already in the pot and how much gravy you prefer.

Add:

  • Onion

  • Bell pepper

  • Green onions

  • Ginger

  • Scotch bonnet pepper

  • Carrot

Stir well, cover, and cook for about 15 minutes.

6. Finish the Curry

Add the diced potatoes and continue cooking for another 15–20 minutes, or until the chicken is tender, the potatoes are cooked through, and the gravy has thickened.

About 5 minutes before the curry chicken is finished, taste the gravy and adjust the seasoning if needed. Add a little more Maggi All Purpose Seasoning if desired and allow it to finish simmering.

Remove the whole Scotch bonnet pepper before serving if you prefer a mild curry.
