Authentic Jamaican Fried Chicken (Extra Crispy & Packed with Island Flavor)

Ingredients

Chicken

  • 4 pounds chicken (whole chicken cut into serving pieces, or your preferred combination of drumsticks, thighs, wings, breasts, or leg quarters)

  • ½ cup white vinegar

  • Cold water (enough to cover the chicken)

Seasoning Blend

Use ¾ of the seasoning blend to season the chicken and reserve the remaining ¼ to season the flour.

Flour Coating

  • 3 cups all-purpose flour

  • Remaining ¼ of the seasoning blend

For Frying

  • 4–5 cups vegetable oil (or your preferred frying oil)

  • 1 whole Scotch bonnet pepper or habanero

  • 3 whole garlic cloves

  • ½ large onion or 1 small onion 

Instructions

1. Clean the Chicken

Remove any excess fat from the chicken and remove the skin if desired.

Place the chicken in a large bowl. Add the white vinegar and enough cold water to completely cover the chicken. Allow it to soak for 5–10 minutes.

Drain the chicken thoroughly, rinse under cold running water, then pat each piece completely dry with paper towels.

2. Prepare the Seasoning Blend

In a small mixing bowl, combine:

  • Paprika

  • Maggi All Purpose Seasoning

  • Maggi Chicken Seasoning

  • Onion powder

  • Garlic powder

Mix well until evenly combined.

Use ¾ of the seasoning blend to season the chicken and reserve the remaining ¼ for the flour coating.

3. Season the Chicken

Sprinkle the reserved ¾ seasoning blend evenly over the chicken.

Using clean hands (or disposable gloves), massage the seasoning thoroughly into every piece of chicken until evenly coated.

Cover the bowl with plastic wrap, foil, or an airtight lid.

Marinate for at least 30 minutes, or preferably overnight for the best flavor.

4. Prepare the Flour Coating

In a large bowl, combine:

  • 3 cups all-purpose flour

  • The remaining ¼ of the seasoning blend

Mix thoroughly until the seasoning is evenly distributed throughout the flour.

5. Season the Oil

In a deep frying pot or Dutch oven, add the vegetable oil.

Add:

  • 1 whole Scotch bonnet pepper (or habanero)

  • 3 whole garlic cloves

  • ½ large onion or 1 small onion

Heat over medium heat.

Once the garlic, onion, and pepper begin to brown, carefully remove them from the oil or leave them in for extra flavoring. Your oil is now perfectly flavored and ready for frying.

6. Coat the Chicken

Working a few pieces at a time, coat each piece of chicken in the seasoned flour.

Press the flour firmly onto every surface of the chicken to ensure an even coating.

Shake off any excess flour before placing the chicken into the hot oil.

7. Fry the Chicken

Carefully place as many pieces of chicken into the oil as your pot can comfortably hold without overcrowding.

Maintain the oil at medium heat throughout the cooking process.

Fry the chicken for approximately:

  • 4 minutes

  • Flip and fry 4 minutes

  • Flip again and fry 4 minutes

  • Flip one final time and fry 4 minutes

Total frying time is approximately 16 minutes.

Larger pieces may require 18–20 minutes.

The chicken is fully cooked when the thickest part reaches an internal temperature of 165°F (74°C).

8. Drain and Serve

Transfer the cooked chicken to a wire rack placed over a baking tray.

Allow it to rest for several minutes before serving.

Repeat until all of the chicken has been fried.
