Ingredients
- 4 cups all-purpose flour
- 2 tablespoons granulated sugar (optional)
- 2 teaspoons salt
- 4 teaspoons baking powder
- About 2 cups cold water, added gradually
- 1½ cups vegetable oil, for frying
Instructions
- In a large mixing bowl, combine the flour, sugar (if using), salt, and baking powder.
- Gradually add the cold water while mixing until a soft dough forms. Knead for 5–8 minutes, or until the dough is smooth and elastic. The dough should be soft but not sticky.
- Cover the dough with a clean kitchen towel or place it in an airtight container. Let it rest for 30 minutes. This allows the gluten to relax and the baking powder to activate, resulting in softer, fluffier dumplings.
- Divide the dough into 12–16 equal pieces and shape each into smooth balls.
Tip: Don't make the dumplings too large—they will expand during frying because of the baking powder.
- Heat the vegetable oil over medium heat. To test if the oil is ready, drop in a small piece of dough. If it gently rises to the surface, the oil is at the right temperature.
- Carefully place the dumplings into the hot oil, leaving enough space between them so they can expand.
- Fry for 10–12 minutes, turning every 2–3 minutes, until the dumplings are evenly golden brown and cooked through. Cooking over medium heat allows the inside to cook completely without burning the outside.
- Remove the dumplings and drain on paper towels before serving.
